Apple Rose Cakes

These are definitely one of the most beautiful cakes that I’ve baked recently. They are delicious hot with a scoop of vanilla ice cream on the side or cold on their own.

Those little beauties look fabulous, taste divine and they are easy to make. Here is how:

 
You will need:

 
2 apples, cored and sliced into half-moons
Puff pastry in a roll
Cinnamon
Brown sugar
Thick vanilla yogurt
Lemon
Icing sugar

 

 

 

 

 

 

apple11. Place sliced apples in a bowl, pour 6 tb spoons of water over them and squeeze juice of half of lemon.

Stir and cook in the microwave for 3-4 minutes until all slices are tender, bendy/ soft so they can fold easily. Don’t over-cook them so they don’t fall apart.

Put them aside to cool.

2. Unroll puff pastry sheet and cut it along the shorter edge into about 2inch/ 6cm wide strips. Spread 1 heap tb spoon of vanilla yogurt all over each strip and sprinkle with cinnamon.

3. Arrange apple slices along the pastry strip so they are overlapping each other and sticking little bit out of the edge of the pastry.

Sprinkle with a t spoon of brown sugar.

4. Fold up the other edge of the pastry strip as on the picture.

5. Carefully roll the strip with apples from one end to the other ensuring so the apples don’t move. This should create your rose bud.

Please each Apple Rose Cake in the muffin tin and bake for 30 min at 190’C till golden.

6. Once baked, lightly dust with icing sugar.

This recipe will give you 5-6 Apple Rose Cakes.
