Chlodnik – Polish cold beetroot soup

Healthy, nutritious, refreshing, delicious, quick and easy to make. And there is no cooking involved! You just chop, grate, mix and cool in the fridge! Here is one of my all time favourite summer dinners-  Chlodnik.

On a hot summer’s day cold soup is something I crave. Once you’ve tried it – you will as well! My two favourites are Spanish Gazpacho and Polish Chlodnik – and Chlodnik recipe is the one I would like to share with you today.

(4 portions)

500ml Greek yogurt (full fat)

500ml natural yogurt

1 stock cube (vegetable or chicken)

Small bunch of fresh dill

Small bunch of spring onion

1 large cucumber

4 peeled and cooked beetroots

4 eggs

Salt & pepper

  1. Dissolve stock cube in a half cup of a hot water and set aside to cool.
  2. Pour both Greek and natural yogurts into a large bowl or pot.
  3. Finely chop dill and spring onion and add to the yogurt.
  4. Grate cooked beetroots and whole cucumber and add to the yogurt.
  5. Add cooled stock, season with dash of salt & pepper and mix all well. You will notice that whole mixture turns hot pink in colour. The mixture should be thick and velvety with a fine crunchiness of vegetables and herbs showing through.
  6. Put it in the fridge and once it’s cold serve it with a hard-boiled egg on top.

 

Chlodnik is delicious on it’s own and it’s just perfect for a hot summer’s day, but if you fancy more high energy meal (especially if you are exercising/ training or just feeling more hungry), chlodnik will be perfect side dish served with fried eggs on a bed of buckwheat and green beans. Fast and easy meal which is healthy and delicious.
