Fast and easy dinner – Chicken & Ham Omlette

This recipe is fast and easy option for a dinner and perfect if you have some Sunday roast leftovers. It tastes good hot or cold.

Ingredients: 2 large cooked potatoes, some cooked chicken, few slices of smoked ham, 8 eggs, 2 tomatoes, spring onion, jalapeno peppers, red pepper and cheese.

Method: Butter up loose bottom tart tin or a round baking tray. Spread an equal layer of  cooked potatoes in chunks. Scatter small pieces of chicken and chopped ham in between potatoes, then sliced tomato and red pepper on top. Bake for 10 min in preheated oven at 200’C. In the meantime break 8 eggs into a bowl and whisk with some seasoning. Take the tin out of the oven and pour beaten eggs all over so all filling is covered (the eggs won’t leak out of the loose bottom tin or cake tin once the tin is hot and hot potatoes will help to cook your omelette quicker). Sprinkle with chopped spring onion, jalapeno peppers and layer of cheese. Return to the oven and bake for another 25-30 min at 180’C until eggs are cooked. Serve with dressed in few leaves of rocket or basil. Eat hot or cold.omlette1
