Puff Pastry Tart with Grilled Vegetables


Quick lunch or dinner idea  – perfect for when you haven’t planned what to cook and you just want to make something delicious and fast. It’s just ideal for when you have friends popping over and the kids will love this as well.


Puff Pastry Tart with 3 cheeses and grilled veg (v)


Cooking time 20 minutes




For tart:


Puff pastry sheet

Tomato passata or ketchup

For 3 cheeses version: cheddar, mozzarella &  padano cheese or you can use any other cheese of your choice


Red pepper

Fresh basil


For grilled veg:




Spring onion

Rocket and sundried tomato for dressing




  1. Cut puff pastry sheet into desirable tart sizes (1 sheet will make 3 tarts as pictured) and spread 1 tb spoon of tomato passata or ketchup on each tart leaving edges bare.
  2. Sprinkle each tart with grated cheddar cheese, followed with sliced tomato, red pepper strips or cubes and mozzarella slices on top. Season with salt & pepper and bake in preheated oven at 200’C for 20 min until golden.
  3. In the meantime while tarts are baking, grill sliced courgettes, and aubergine seasoned with salt, pepper and smoked paprika.

Best way to grill it would be on a grilling plate or pan on the stove, otherwise use your oven grill. If  you are using a grilling plate or pan, use spray oil to avoid veg getting burned or dry. Grill your veg on both sides, turning them occasionally until they are soft. Chuck some spring onion sticks towards the end and grill them as well for last few minutes.

  1. By the time your veg are ready, your tarts should be as well. Take the tarts out of the oven and sprinkle some grated padano cheese and garnish with fresh basil.
  2. Serve grilled veg on the side dressed with rocket and sundried tomatoes.

Not happy with gluten or diary? Just switch to gluten free puff pastry and vegan cheese 🙂
