Sweet Potato Fritters


The weather has been kind this week so it’s time to enjoy a good old picnic. Whether it’s in the park, beach, garden or a balcony, here is a recipe be enjoyed al fresco.

Hot or cold sweet potato fritters are delicious and exciting dish. Perfect served with tzadzyki dip or just some freshly squeezed lime and fresh herbs. Great just on its own or in a company of other dishes such as calamari, corn on a cob and salad.

4 medium size sweet potatoes

3 eggs

4 tb spoons of flour

1 tb spoon of vegetable oil

Dash of Salt & Pepper, American BBQ Spice, Smoked Paprika, parsley and tad of Garlic granules or 1 pressed clove

  1. Grate sweet potatoes and add eggs, flour, oil and spices. Mix well.
  2. Form palm size balls and place them on a baking tray lined with greased up parchment paper. Flatten the balls to create a fritter shape.
  3. Bake in pre-heated oven at 180’C for 20-25 min until the fritters are crispy outside and soft inside.

Serve with fresh herbs (basil or coriander is great), fresh lime or tzatziki

    1. Thank you Julie. I haven’t tried Sweeet Potato Fritters from the BBQ yet, but if you bake them in the oven beforehand, you can put them for a little bit on the BBQ for the little bit of ‘more outdoorsy’ flavour 😉 and don’t forget to try them with tzatziki! 🙂 Enjoy your weekend 🙂
