Weekend Breakfast Omlette

breakfast-1615784_960_720Good morning! What’s for breakfast? We like to make our weekend breakfast a little bit more special and on the weekend eggs are a must! Fried, scrambled, poached… however you like them. Try this omelette recipe: Roughly cut some mushrooms and fry those with a small splash of some olive oil and seasoning, once they are cooked add some spinach leaves and chopped tomatoes. Stir through until tomatoes are warmed through and spinach absorbs the juices and cooks through. In the meantime break 2 eggs into a bowl and beat them with a fork adding some salt & pepper. Melt some butter on a non-stick frying pan and once hot, pour in the beaten eggs. Cook on medium heat under cover. Once cooked spread mushroom, tomato and spinach mix and fold over. Serve with by itself as a no-carb option or with your favourite bread and a bowl of fruit salad if you feel hungrier
